Salmon Burgers

Salmon burgers are one of those foods that picture a delicate yet fatty fish patty, seasoned well, with a lightly seared crust and a tender and juicy medium-rare center

Ingredients


  • 1 Salmon Burger Patty
  • 1 Kashkaval Cheese, sliced
  • 1 Seasons mix
  • 1 Lettuce
  • 1/2 cup(s) Light Mayonnaise
  • 1 Tbsp Mustard
  • 1 Garden Tomato, cut into slices

Method


  1. Cook salmon burgers according to package directions.
  2. Top with cheese after turning to second side.
  3. Heat bread, if desired.
  4. spread the mayonnaise and mustard over cut sides of rolls or sandwich thins.
  5. Place salmon patties, topped with tomato slices, in between the "bun."​
  6. Press together gently and serve.

Turkey Schnitzel

These turkey schnitzels are thin, soft tender and golden brown! These turkey schnitzel are absolutely perfect for a weeknight dinner

Ingredients


  • 1 2-pound turkey breast or 4 turkey cutlets
  • 2 eggs, lightly beaten
  • ½ cup flour
  • 1 cup panko style bread crumbs
  • 3 tablespoon chopped flat leaf parsley
  • 1 tablespoon chopped fresh thyme
  • 3-4 fresh sage leaves, chopped
  • Zest of 1 orange
  • Olive oil
  • Salt and pepper

Method


  1. Cut the turkey breast (skin-off) into ½ inch thick slices. You can cut them across the short end of the breast or the long end. Pound the turkey cutlets or pieces, between 2 sheets of plastic, as thinly as possible. (Very cathartic before a family gathering!)
  2. Place the eggs in a shallow pan
  3. Place the flour in a separate shallow pan
  4. Place the remaining ingredients in a separate shallow pan combined.
  5. Place a medium sauté pan coated with olive oil over medium high heat.
  6. Season the turkey pieces with salt and pepper, Place a piece of turkey in the flour. Coat the turkey with egg thoroughly. Place the turkey in the egg. Finally place the turkey in the seasoned bread crumbs.
  7. Place the breaded turkey in the heated pan and cook until the breads crumbs are browned. Turn and brown on the other side. Transfer the browned turkey to a parchment lined baking dish. Continue with the remaining pieces. This step can be done one day ahead of serving. You can store the browned turkey in the refrigerator over night.
  8. Before serving, place the turkey in a preheated oven at 350 and roast the turkey until it is cooked through (about 12 minutes).

Pan-Fried Salmon

Pan-frying salmon is simple and fast. You can season salmon to your tastes prior to pan-frying to create a tasty meal.

Ingredients


  • 1 Atlantic Salmon Portion 
  • 2 tablespoons olive oil
  • Sea Salt and freshly ground black pepper

Method


  1. Bring the salmon to room temperature 10 minutes before cooking. 
  2. Warm a large nonstick skillet with oil over medium-low heat. Season the fish with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more. 
  3. The skin can be served or removed easily with a knife or spoon. 
  4. Transfer to a plate and serve as desired.

Spaghetti Bolognese

This Spaghetti Bolognese recipe has very simple ingredients that create a really tasty family dish, make a little extra and have the leftovers for lunch

Ingredients


  • 2 medium onions, peeled and chopped
  • 1tbsp olive oil
  • 1 garlic clove, peeled and crushed
  • 500g lean minced beef
  • 1tsp dried oregano or mixed herbs
  • 400g can tomatoes or chopped tomatoes
  • 300ml hot beef stock
  • 1tbsp tomato ketchup or purée
  • 1tbsp Worcestershire sauce
  • salt and ground black pepper
  • Parmigiano Reggiano cheese
  • ​500g Spaghetti 

Method


  1. Put the onion and oil in a large pan and fry over a fairly high heat for 3-4 mins. Add the garlic and mince and fry until they both brown. Add the herbs, and cook for another couple of mins.
  2. Stir in the tomatoes, beef stock, tomato ketchup or purée, Worcestershire sauce and seasoning. Bring to the boil, then reduce the heat, cover and simmer, stirring occasionally, for 30 mins.
  3. Meanwhile, cook the spaghetti in a large pan of boiling, salted water, according to packet instructions. Drain well, run hot water through it, put it back in the pan and add a dash of olive oil, if you like, then stir in the meat sauce. Serve in hot bowls and hand round Parmigiano Reggiano cheese, for sprinkling on top

Chilli Mussels

This spicy seafood recipe makes a fantastic meal for two but can be easily increased for a stylish dinner party starter.

Ingredients


  • 2 ripe tomatoes
  • 2 tbsp olive oil
  • 1 garlic clove, finely chopped
  • 1 shallot, finely chopped
  • 1 red or green chilli de-seeded and finely chopped 
  • small glass dry white wine
  • 1 tsp tomato paste
  • pinch of sugar
  • 1 bag of Chilean mussels
  • good handful of basil leaves

Method


  1. Put the tomatoes in a heatproof bowl. Cover with boiling water, leave for 3 mins, then drain and peel. Quarter the tomatoes and scoop out and discard the seeds using a teaspoon. Roughly chop the tomato flesh.
  2. Heat the oil in a large pan with a tight- fitting lid. Add the garlic, shallot and chilli, then gently fry for 2-3 mins until softened. Pour in the wine and add the tomatoes, paste, sugar and seasoning (mussels are naturally salty so take care with the salt). Stir well and simmer for 2 mins.
  3. Tip in the mussels and give them a stir. Cover tightly and steam for 3-4 mins, shaking the pan halfway through, until the shells have opened.​
  4. Discard any shells that remain shut, then divide the mussels between two bowls and add the basil leaves. Provide a large bowl for the empty shells.

Wagyu Beef Burger

Wagyu beef make for fantastic burgers – and if you haven’t had one then you’re really missing out! Wagyu beef is considered one of the tastiest meats,

Ingredients


  • Wagyu Beef Patty
  • 2 teaspoons fine sea salt
  • ½ teaspoon freshly ground black pepper
  • 6 slices cheddar cheese, optional
  • 6 burger buns, split

Method


  1. Prepare the grill for direct cooking over medium-high heat. Shape the burgers into 6 equal portions, making an indentation in the center of each patty with your thumb to prevent the patties from puffing on the grill.
  2. Grill the patties, turning once, until cooked to desired doneness. During the last minute of grilling place a slice of cheese (if using) on each patty and toast the rolls, cut-side down. Place the burgers on the buns
